Try these easy healthy chicken recipes for lean protein source which is essential for losing weight.   

When my husband, Eddie and I first met he really thought the only thing I knew how to make was chicken.  Silly man....I knew how to cook plenty of other things!! But chicken is so easy to make and it's so versatile and it's a fat loss, staying lean must have staple!!  But chicken can get old if you make it the same way again...and again...and again.

So keep changing it up and what's old can become new.  I'll be adding to this page often (since I really do love chicken....there will be frequent additions to this page).

Slow Cooker Shredded Chicken Recipe

This chicken crockpot recipe is SO SUPER SIMPLE I can't stand it!!  My client, Patty recommended this and I LOVE IT.

INGREDIENTS:

  • 4 chicken breasts
  • 1 jar of salsa (preferably organic if you can swing it)
  • 1 can of beans - I like White cannelini beans, Black Beans or Red Beans
  • 1/4-1/3 pack of low sodium taco seasoning

DIRECTIONS:

Add all ingredients in a slow cooker.

Cook for 4-5 hours on high or 7-8 hours on low.

When chicken is cooked…..shred with a fork.

It's THAT Simple!!!

Serve with tortillas, tostada, wraps or tacos or on top of a bed of greens or on top of a bed of rice.  I made mine with a side of kale chips :-)

It's so easy and makes enough for leftovers.
